Fettuccine with Garlic Butter Shrimp

Serves 4

fettuccine or linguine
1 pound
uncooked medium shrimp, peeled and deveined
Kosher salt
Freshly ground black pepper
8 Tablespoons
unsalted butter, divided
½ teaspoon
dried oregano
½ teaspoon
crushed red pepper flakes
5 cloves
garlic, minced
2 cups
baby spinach or baby arugula
3 Tablespoons
freshly grated Parmesan, plus more for serving
Chopped fresh parsley leaves, for garnishing

Cook pasta according to the package directions; drain well. Place shrimp in a bowl; season with salt and black pepper and set aside. Place a large skillet over medium high heat. Add 2 tablespoons of the butter to skillet. When the butter has melted, add oregano and red pepper flakes to skillet; cook and stir for 1 minute. Add minced garlic to skillet; cook and stir for 1 minute. Add shrimp to skillet; stir and cook for about 2-3 minutes, until shrimp is pink. Transfer cooked shrimp to a new, clean bowl. Add remaining 6 tablespoons of butter to the skillet. When the butter has melted, add in the cooked pasta, baby spinach (or baby arugula), and 3 tablespoons of Parmesan. Stir ingredients until spinach begins to wilt. Add the shrimp back into skillet; toss. Once plated, garnish with chopped parsley and serve with additional Parmesan.
