Resolution: Try a New Cuisine

Cooking resolutions are some of the most fun resolutions to make, like resolving to learn how to cook foods from other cultures, such as Chinese or Mexican cuisine. Try this Simple Vegetable Lo Mein. It comes together fast, and it’s a great recipe to make if you have leftover chicken, beef or vegetables.

Simple Vegetable Lo Mein

Serves 4

Ingredients


For the Sauce

2 teaspoons
sugar
½ teaspoon
ground ginger
½ teaspoon
Sriracha, or more, to taste
1 teaspoon
sesame oil
2 tablespoons
reduced sodium soy sauce

For the Noodles

8 ounces
lo mein egg noodles
1 tablespoon
olive oil
3 cloves
garlic, minced
1
red bell pepper, trimmed, deveined, julienned
1
carrot, peeled and julienned
2 cups
cremini mushrooms, or mushrooms of your choice, sliced
3 cups
baby spinach
½ cup
snow peas

Directions

Place sugar, ground ginger, Sriracha, sesame oil, and soy sauce into a small bowl; whisk then set aside.

Cook noodles according to package directions; drain well.

Set a wok or large skillet over medium high heat. Add oil to skillet; heat. Add garlic, bell pepper, carrot, and mushrooms. Cook and stir ingredients until tender, about 3 minutes.

Add spinach and snow peas to skillet. Cook and stir ingredients for about 3 minutes or until the spinach has wilted.

Add cooked egg noodles to skillet, as well as the soy sauce mixture. Gently toss to combine. Serve.
